Summer Salad Dressing:
Mix in a food processor until well blended:
- 4 Tablespoons freshly squeeze lime juice
- 4 Tablespoons Lemon Olive Oil*
- 2 Tablespoons Strawberry Balsamic Vinegar*
- 1 Tablespoon honey
- 1 teaspoon Kosher salt
- 2/3 cup fresh mint leaves

This salad dressing also goes great on almost any combination of fruit and spinach, arugula, or lettuces.
Salad ingredients:
- 2 cups cubed watermelon
- 1/2 to 1 Cup chopped English cucumber
- 1/4 to 1/3 cup crumbled Feta cheese
Carefully toss by hand or gently turn over with a wooden spoon to keep the watermelon from breaking down.
