- 4 Cups Fresh Or Frozen Green Beans
- 2 Strips Bacon, Diced
- 1 Medium Onion Thinly Sliced
- 1/2 Cups White Wine
- 3 Tablespoon Sugar
- 3 Tablespoon Tarragon Or Cider Vinegar
- 1/4 Tsp Salt
- 2 Tsp Cornstarch
- 1 Tablespoon Cold Water
Cook beans in a saucepan covered with water.. Meanwhile in a large nonstick skillet, cook bacon over med. heat til crisp. Remove with slotted spoon onto paper towels. Reserve 1 tsp drippings.
In the drippings, sauté the onion til tender. Add wine vinegar, sugar,and salt. Combine cornstarch and cold water til smooth; add to skillet. Bring to a boil; cook and stir for 2 min to thicken. Drain beans, top with onion mixture. Sprinkle with bacon. Toss to coat.
