Pancake Test

This morning, we tried two kinds of pancakes, both using two cups of Bisquik. The regular pancake recipe turns out a standard size pancake and the batter is easy to use for baby pancakes. The buttermilk version turns out a dense pancake and half as many. A single buttermilk pancake is as filling as two or three regular pancakes. They taste very similar, so the deciding factor will be whether or not you have buttermilk on hand and how many pancakes you want to cook.

A standard size griddle can hold 4-6 pancakes. The buttermilk recipe makes 5-6 pancakes and the regular recipe makes 8-10 pancakes. With the buttermilk recipe, all the pancakes can cook on the griddle at the same time. With the regular recipe, the chef will needs to keep the first batch warm under a covered plate while frying up the second set. Either way, someone else needs to watch the bacon!
