This is my second favorite option for preserved lemons: Lemony Pasta with Spinach. Toasting the Panko-style breadcrumbs adds both color and a more satisfying crunch. And the best thing? This recipe is easy to modify for vegans. Just substitute Earth Balance Buttery spread for the butter.
